Sterilisation of poly bags (potatoes) in delicatessen operations

Pre-cooked potato slices vacuum-sealed in poly bags are used for the production of salads. The surfaces of these bags are sometimes strongly germ-infested due to transport and storage. These poly bags are sterilised prior to opening with the tunnel shown.
